Baked Red Tomatoes

  • 4 Vintage Ripes
  • 1 cup panko (Japanese bread crumbs)
  • 2 eggs, beaten
  • Salt
  • Pepper
  • Preheat oven to 375 degrees.
  • Slice Vintage Ripes horizontally.
  • Combine panko, salt and pepper in a shallow dish.
  • Submerge each slice in the egg, then coat with panko.
  • Add slices to a greased baking sheet and cook for 20 minutes or until golden brown.
