Lipman Recipe Book
Ingredients:
- Crusty baguette
- 1 cup assorted chopped tomatoes (Vintage Ripes and Garden Jewels work well)
- Fresh cilantro, coarsely chopped
- 1/2 cup black beans
- 1/2 cup corn kernels (frozen, fresh or grilled)
- 1/2 cup chopped onions
- 1 chopped avocado
- 1 Tbsp. olive oil
- Salt
- Pepper
- Cotija cheese (optional)
- 2 jalapeƱos, diced (optional)
Directions:
- Mix olive oil, tomatoes, cilantro, black beans, corn, onions, avocado and jalapeƱos in a medium bowl. Add salt and pepper to taste.
- Chill for at least 1 hour prior to serving.
- Spoon mixture onto toasted baguette slices or large tortilla chips, for a fun twist.
- Top with crumbled Cotija cheese.
