Mexican-Inspired Bruschetta

  • Crusty baguette
  • 1 cup assorted chopped tomatoes (Vintage Ripes and Garden Jewels work well)
  • Fresh cilantro, coarsely chopped
  • 1/2 cup black beans
  • 1/2 cup corn kernels (frozen, fresh or grilled)
  • 1/2 cup chopped onions
  • 1 chopped avocado
  • 1 Tbsp. olive oil
  • Salt
  • Pepper
  • Cotija cheese (optional)
  • 2 jalapeƱos, diced (optional)
  • Mix olive oil, tomatoes, cilantro, black beans, corn, onions, avocado and jalapeƱos in a medium bowl. Add salt and pepper to taste.
  • Chill for at least 1 hour prior to serving.
  • Spoon mixture onto toasted baguette slices or large tortilla chips, for a fun twist.
  • Top with crumbled Cotija cheese.
