Strawberry Gazpacho

  • 2 pounds of Roma tomatoes, for juice
  • 1 pound Cherry Berries
  • 1 pint fresh strawberries
  • 1/2 red onion, diced
  • 1 cucumber, peeled, seeded and chopped
  • 1 red pepper, chopped
  • 2 stalks celery, chopped
  • 2 cloves garlic, minced
  • 1/4 cup olive oil
  • 1/4 cup balsamic vinegar
  • 2 Tbsp. fresh chives
  • 2 Tbsp. sugar
  • Salt and pepper
  • Chives (for garnish)
  • To easily peel the tomatoes, make a small “X” on the non-stem end of each tomato with a sharp knife. Dunk the tomatoes in boiling water for about 30 seconds and then remove them with a slotted spoon. Rinse the tomatoes under cold water and the skins of the tomatoes should easily peel back. Peel all the tomatoes.
  • Add tomatoes to a food processor along with 2 cloves of garlic. Process until smooth. Strain tomatoes to remove seeds and you should be left with a few cups of really fresh tomato juice.
