Tropical Tomato Dessert Sauce

  • 1 pound fresh strawberries, cleaned and hulled
  • 1/2 cup green grapes
  • 3/4 pound Vintage Ripes tomatoes, peeled and diced
  • Several squeezes of agave nectar or sugar to taste
  • 1/2 cup strawberry preserves
  • 2 Tbsp. fresh lime juice
  • Add the strawberries, tomatoes, grapes and agave nectar or sugar to a food processor. Pulse until smooth. (If you don’t have a food processor, you can use a blender and strain the sauce through a fine mesh sieve.)
  • Warm the strawberry preserves in the microwave. Add them to the processor, along with lime juice.
  • Serve chilled or at room temperature atop pound cake or ice cream, or as part of a yogurt parfait. Excess sauce can be stored in the refrigerator for up to 3 days.
